What do I need to pack for New Zealand in March?

We will be visiting both islands for 4 weeks in March. Hiking, outdoor activities, museums, etc. What is the weather like and what should I bring? Also, is there a reason most people travel from North to South? We were thinking of touring the South Island first. Thanks!!
